Savory Watermelon Pizza
Savory watermelon pizzas makes the perfect pool party appetizer. If you have a BBQ, even better, because you can put your watermelon pizza on the grill, too!
The Flavor Bible by cookbook author Karen Page provides a helpful list of cheeses, vegetables, and herbs that pair well with watermelon. It includes ingredients that you would never think of eating with watermelon such as goat cheese, jicama, tomatoes, fennel, and cilantro. And it's this book that inspired this Southwestern-style watermelon pizza:
1. Southwestern
Ingredients:
- queso fresco
- jalapeño
- cilantro
- lime
- honey
- black pepper
How to Make It:
Use a sharp chef's knife to slice the watermelon in half. Then, cut 1-inch thick circles from each half.
Top the watermelon with cheese; this will add a pleasant, creamy texture to your savory watermelon pizza. In the case of this Southwestern-style pizza, top the watermelon with queso fresco, a soft, mild Mexican cheese available in most grocery stores.
Top the watermelon pizza with sliced jalapeños and cilantro. Then, finish off with a sprinkle of black pepper, a squeeze of fresh lime juice, and a drizzle of honey.
Slice the topped watermelon pizza into eight pieces, just like you would any homemade pizza. Then just set the slices on a platter and watch as they disappear!
Dessert Watermelon Pizza
You can also make watermelon pizza for dessert. Just start with a creamy component such as whipped cream, and top with fresh fruit, herbs, and a drizzle of chocolate or a glaze.
2. Blueberry-Kiwi
Ingredients:
- whipped cream
- blueberries
- kiwi
- walnuts
- fresh mint
- melted chocolate
How to Make It:
Dessert watermelon pizzas are terrific with a layer of whipped cream. Other creamy alternatives include cream cheese, coconut cream, soft cheeses, and fruit purees.
Top the dessert watermelon pizza with blueberries, sliced kiwi, walnuts, and fresh mint leaves. Then finish it off with a drizzle of melted chocolate.
Slice the topped watermelon pizza into eight pieces and place on a platter. This is a fantastic, light dessert after a heavy meal.
